Zereshk Polo | Iranian cuisine

Zereshk Polo is one of the known Persian (Iran) cuisine.  Let’s see how it is beautifully prepared.

Ingredients:

800 gm basmati rice soaked in warm slightly salted water for 2hrs.
1 1/2 kg chicken
100 gm silvered almonds
100 gm silvered pistachio
100 gm zereshk (dried barberries)
20 gm sugar
100 ml oil
1 tsp ground saffron dissolved in 5ml warm water
1 chopped onion
100 gm tomato paste
Salt & pepper for seasoning

Procedure:

Season the chicken and then roast it in the oven until well done.  Add the rice to a pot of boiling water, drain the rice once cooked.  Mix the cooked rice with the dissolved saffron.  To prepare the tomato sauce, fry the chopped onions in vegetable oil then add the tomato paste and 300 ml water.  Season the sauce with salt.

Pan fry the zereshk with the sugar for a short period of time.

Place the rice in a serving dish and add the roasted chicken on top.  Sprinkle the zereshk and the silvered almonds and pistachio on top.

Garnish with grilled whole onion, tomato and green chilli.
